A freshwater crustacean that closely resembles a lobster and is found in unpolluted streams and lakes. Crayfish breed in the autumn so they are best caught in the summer. Most of the crayfish used in cookery today is farmed and are best cooked as for lobster or prawns. The european variety are quite small but some varieties like the australian can grow up to 6kg. Most crayfish make excellent eating.
