Recipe for Baked Red Mullet with Saffron and Mint
A small round sea fish that is crimson red to dark pink in colour. It has a delicate but fine flavour and is best cooked simply and whole with the liver still inside. Fillets can be grilled or fried but avoid using other strong ingredients.
