A flat seawater fish that is distinctive with its bright orange spots. Growing up to 90cm in length, they are usually sold much smaller either whole or filleted. This is a popular fish that does not have much flavour, but can be adapted to many recipes and is an acceptable replacement for sole. Use only very fresh plaice as the little flavour it has quickly deteriorates becoming dull and watery. Small fish are best cooked whole and cooked simply where as thick fillets can be marinated and used with flavousome ingredients to produce more interesting dishes. |
