The young female is always better than the male, especially near the start of the breeding season when the flesh of the male tends to become rank and coarse in flavour. Quality in the young Rabbit is determined by ears that tear easily and the bones of the lower jaw which break easily with a little pressure. The interior of the animal should smell fresh and sweet with no pronounced gamey smell or taint. Kidneys well covered with fat are a sign of good condition and over all the body should be plump, well-fleshed and of a clean white to pink colour. |
