Geese are generally available from the middle of September through to the end of December. They vary in size from 4kg to 7 kg according to the breed and age. The quality signs for a young bird should be pale skin with a minimum of stubble or feather pins, smooth thin legs and a smooth bill. Geese contain a high amount of fat, like ducks, which must be considered during preparation and cooking.
