The name applied to a number of species of small, clawless crustaceans with long curved tails and large heads. Found all over the world they vary in size from 7 to 20 cm in length and from translucent white in colour to deep red or brown. Can be bought raw or cooked, shelled or un-shelled and fresh, frozen or dried.
