One of the largest sea crustaceans, european ones grow up to 2kg where as the american variety can be much larger. they are a blue/grey when alive and a bright red/pink when cooked. Female lobsters are more tender and contain the orange eggs known as the coral. lobsters should feel heavy for their size and yield 50% of their weight in edible meat.
